I have to be careful about what I eat, but there's no need to be a fanatic about it. This looks delicious.

I discovered a few years ago that whenever a recipe calls for buttermilk, I could substitute plain yogurt (the Greek kind could be a little too thick). That way I wasn't stuck with leftover buttermilk, and we always had yogurt on hand.
ReplyDeleteMrs. Paco makes her own yogurt now with an Instant Pot. I don't fully understand the alchemy involved, but the process somehow generates whey, which she occasionally uses as a substitute for milk in making biscuits and certain breads requiring buttermilk. The stuff seems to make fluffier-than-usual biscuits.
