I feel for Mr. Phillips having to undergo this LGBTQWHAtever vendetta, but I don't think the alphabet whatevers realize the amount of disgust and outright hate they're building for themselves. They think that forcing bakers to violate their consciences is going to vindicate the LGBTQWHAtever lifestyle, which is the exact opposite of what they're achieving.
Their goal can never be achieved, and some know it but would rather continue on rather than admitting being wrong. As Saul Alinsky pointed out that any amount of collateral was fine.
