Here's chuck-wagon chef Kent Rollins cooking up some corn dodgers.
Remember the "corn dodgers" from True Grit? Cowboy Kent Rollins did a video where he made some. Both the traditional way (which were pretty rough and ready) and a modernized more flavorful recipe. The latter use baking powder and add Hatch chiles.

ReplyDeleteI used to make corn bread and hush puppies from scratch. Now that I'm alone, I just mix up a little corn meal, salt, and flour and bake it in muffin tins greased with butter. I'm also into making fry bread these days to have with Coba beans boiled up with bacon pieces. Hmm. Time for an early dinner, I think.
ReplyDeleteMrs. Paco makes bread two or three times a week, now. One of my favorites is something called colonial bread, which combines bread flower with a small amount of corn meal and molasses. Great for toast or sandwiches.
